The best oysters in the world!

Some exceptional oysters on the menu tonight  (Ostra Regal) discovered at the market at Saint Servan sur Mer close to St Malo.


These oysters may be bought in France but they started their lives in Ireland. Reared on the cold and wild Atlantic Ocean in Clew Bay ( off Galway) for two years, then two years in Waterford Bay and then to France for further growth and dispatch to some of the world's best restaurants!


We also found some wonderful scallops and a skate wing so dinner is sorted!


The scallops were served as a carpaccio with herring roe in a smoked salted cream.


The skate wing was pan fried in butter with lemon, carpers and parsley.
